I’ll be honest, when I first decided to get some chopped apples and rolled oats together into an overnight oat recipe, well, I didn’t know it would be SO GOOD.

And the fact that I can’t make enough of this honey overnight oats recipe to keep it for more than one day should be sign enough that this is a truly great recipe.

Butyou know how it goes, you get busy, you let your bad habits get the best of you, and the next thing you know your average day doesn’t include eating until after noon! Opps!

Then you go through a phase where you’re ready for some meal prep and fresh fruit in your diet. Finally.

Nothing is better than the moment you realize you haven’t A) had breakfast in a month and B) no fresh fruit for about a week.

And yes, I know! Breakfast is the most important meal of the day. Believe me I know!

But I wake up, make coffee, let the dogs out, etc, etc, and get right to work… Next thing I know I’m 4 cups of coffee deep into my morning and its almost 12 o’clock and I’m STARVING!

So breakfast for me needs to be quick, simple, tasty, and not require a whole lot of time or effort.

And when you’re not a fan of eggs, and have a hard time finding a gluten free protein shake mix that you actually like for smoothies, breakfast is a CHALLENGE.

ThisHoney Apple Cinnamon Overnight Oats Recipe makes enough for 2 mason jars full of breakfast yumminess and only takes a few minutes to put together.

Feel free to double the recipe, though, if you’re serving more than two people. It takes minutes of prep for a really great and healthy breakfast.

You ready? Let’s jump to the recipe.

What You Need to Make Apple Overnight Oats:

  • 2 cups of Steel Cut Oatmeal (you can use rolled oats, too, that’s really good, but I went with steel cut)
  • 1 cup Plain Greek Yogurt (if you want this to be dairy-free recipe, just replace with some coconut milk yogurt)
  • 2 Apples (grate or fine chop 1, save the other for morning)
  • 1/2 cup Milk (you can replace with almond milk or coconut milk to make this a dairy free recipe)
  • 2 tsp Cinnamon (reserve 1/2 tsp for garnishing)
  • 2 Tbsp Wild Flower Honey (best if it’s local, you know)
  • Optional: 1/2 cup Peanut Butter for some additional protein

How to Make Overnight Oats Without Chia Seeds:

Mix the oats, yogurt, milk, 1 apple (chopped or grated), cinnamon and honey in a small bowl. Stir well. You want everything to be moist and completely covered. If you can’t get it all, add another teaspoon of yogurt. This will keep it thick and non-soupy.

Spoon this yummy mixture into your mason jars, and add a little more milk, if desired. The oats are going to soak up all the liquid, but still, don’t make it too soupy, or it will still be wet wet tomorrow!

Cover and refrigerate for at least 3 hours or overnight. It’s going to take a long time for the oatmeal to soak up all the liquid, so if you need to break it out in two hours, you can check it, but it will likely not be ready. I really recommend 3 hours at a minimum.

Before serving, top each mason jar of overnight oats with 1/2 of the 2nd grated apple, a drizzle of honey and a light dusting of cinnamon.

I like to eat this on my way out the door, while I’m waiting for the car to heat up or cool off, depending on the season. It’s perfect for a to-go breakfast, because it’s the perfect size for a cupholder (thank you mason jar) and I can eat it with a spoon or without.

Easy peasy.

And it tastes just like a homemade apple pie. So good.
