  • 2 medium Onions, diced small
  • 4 large Tomatoes
  • Salt for taste
  • 4 tbsp. Olive oil
  • ½ Black pepper
  • ½ tbsp. Paprika
  • ½ tbsp. roasted Cumin powder
  • Parsley, chopped
  • 2-4 large Eggs
  • grated Kashaval for garnish, optional

How To Cook Skillet Eggs In Tomato Sauce (SHAKSHOUKA)

  • Heat oil in large skillet for medium heat. Add in diced onions sprinkle a pinch of salt and sauté until soft.
  • Remove the skins from the tomatoes. Cut into cubes, add to the sautéing onions.
  • To this add paprika and roasted cumin powder.
  • Sauté and cook until tomatoes turn soft and have a loose sauce. It will at least take 15-20 minutes.
  • Create small wells in the sauce using backside of the ladle or wooden spoon for each egg.
  • Crack the eggs one at a time into these wells, ensuring they are evenly distributed across the skillet.
  • Season with salt and black pepper.
  • Cover the skillet and allow the eggs to cook in the sauce for about 5-7 minutes, or until the egg whites are set and yolks (yellow) turn soft.
  • Once the eggs are cooked to your liking, remove from heat.
  • Garnish with chopped fresh parsley or cilantro.
  • Sprinkle grated Kashaval cheese and serve with toast.
